Exquisite and silkily textured, Bindi Block 5 Pinot Noir has fresh cherry mineral aromas, delicate floral camomile notes, a well concentrated palate and lacy tannins. The savoury oak kicks in at the finish. The minute 1.3 acre Block 5, planted in 1992, is the most naturally protected vineyard. The vines, grown on shattered quartz over alluvial silts and top soil are all vertically shoot positioned to optimise exposure to sunlight. Wine making is unsophisticated, strictly non-interference but not uncontrolled”. Depending on vintage, the Block 5 Pinot Noir sees about 25% to 40% new French oak.
Intense aromas, juicy and concentrated nose. It's macerated cherries, black and strawberries galore, star anise, aromatic tobacco. It's silky, punchy and booming with flavour. Spiced fruit, chewy tannins, and blackcurrant potency.
Pinot Noir wine would be a match made in heaven with dishes like beef, veal, game and poultry.
Cheeses with earthy, mushroom and herbal flavours will make for a great matching with Pinot, particularly an aged Camembert style. Likewise, cured meats and charcuterie taste great matched with a wine that has a little tannin to cut through the fats, and the savoury elements of Pinot Noir match the flavours perfectly.
