Aromatic, sweet and savoury aromas of tarragon, stewed red plums, undergrowth, fennel seed, rhubarb, tamarillo and dates, also some subtle meaty undertones. Dark, savoury and saline elements find balance against fleshy, elemental fruit, red and black berries, stony acids and fine sandy tannins build to drive the finish, fresh and firm. Bold, seductive aromas that run from Indian spice to red berries to briar and back to herbs. It's complex and heady, yet inviting, with plumes of scent evoking the character of the wine from afar. It opens with blueberry and mulberry, plumes into a soft yet dense pouch of fruit and spice, then finishes lithe and earthy, yet lingers with a very fine trail of sweet raspberry.

This shiraz mataro goes beautifully with pasta, lamb and game and duck but it will also pair well with a beef stew. Barbecued red meats will match well with the tannins in the wine, as will char-grilled Portobello mushrooms or meaty sausages.

It will work well with goat's milk cheeses. The straight Mataro tannins and herbs will match the grassiness of the goat's milk cheese.
